Buckwheat Apple Breakfast Muffins



If you're anything like me and some mornings you're in an absolute rush... This recipe is perfect for you and can be made in a head of time! 

Buckwheat Apple Breakfast Muffins 







Ingredients:
  • 1/4 cup buckwheat flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon or less but I LOVE cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 2 eggs
  • 1 mashed banana
  • 1 and 1/2 - 2 Tbsp honey or rice malt syrup
  • 1 small apple peeled and finely chopped
  • 1/4 cup walnuts, chopped


Method:
Preheat oven to 175C (350F). 
In a bowl add in the dry ingredients. Add the eggs, massed banana and honey to the dry mixture and mix well. After all the ingredients are mixed, gradually add the apples and walnuts, stirring as you go. 


Place 6 papers in a muffin form (or I used reusable ones as I find them easier to peel away) and fill them with a batter. Bake for 30 minutes or until the toothpick comes out clean. 
Makes 6 scrumptious muffins.

You Are Fearfully And Wonderfully Made

Imagine you just painted the most beautiful and amazing picture EVER. It was the best painting you have ever seen! It couldn't get any better! You absolutely positively love it! It's beyond beautiful!

But there's a person that keeps poking out it's flaws, comparing it to other paintings. Saying "It's not good and doesn't look any like this".

How would you feel? 

I mean... You planned this painting! You spent time painting every little detail! You knew it was so beautiful and nothing could compare! 



Here's the reality!!! God is the painter and He's given you this amazing, beautiful picture. And it breaks God heart every time you compare yourself and say that YOU are ugly, fat or stupid. Because God has made YOU perfectly, amazingly beautiful. 

You are His perfect painting! You are His pride and joy, who He loves so so much. He spent time knitting you together in your mothers womb (Psalm 139:13).

You are treasured, precious and absolutely beyond beautiful! Believe it and own it!

I praise you, for I am fearfully and wonderfully made. Wonderful are your works; my soul knows it very well.

We are ALL Called to be a Light...




“You are the salt of the earth. But what good is salt if it has lost its flavor? Can you make it salty again? It will be thrown out and trampled underfoot as worthless. “You are the light of the world—like a city on a hilltop that cannot be hidden. No one lights a lamp and then puts it under a basket. Instead, a lamp is placed on a stand, where it gives light to everyone in the house. In the same way, let your good deeds shine out for all to see, so that everyone will praise your heavenly Father..."

YOU are the salt of the earth! YOU are a light for Jesus Christ! To shine His love throughout the world! 

We are all called to be a light for The Lord! I mean... What’s the point of being a Christian and not letting your light shine? I don't know about you, but when I gave my life to God I wanted to go to every bible study, church service and tell people what Jesus done for me. Who He is and how His love is never ending. So why as Christians do we come into this place called the 'comfort zone' and become comfortable in just going to church on Sundays and forgetting that we are called to do so much more then just attend church, or have a personal relationship with Jesus. Jesus tells us to go and make disciples (Matthew 28:19) to go be that light and NOT letting your light hide. 

But how? How can we be a light, how do we make disciples without going around and bible bashing everyone? I mean.. What does shinning your light mean??
  • Showing love
  • Showing kindness
  • When we go a second mile when others won’t or can’t be ‘bothered’
  • When we risk looking like the fool for Christ where others dare not
  • When we show forgiveness towards others
  • When we honor and show others respect
  • God is light so showing his grace 
  • When we do just what Jesus would do in the same circumstances, our light shines!
Choosing to take every opportunity to let your light shine! To let God's love show in a world that is so broken. 

We are in full time ministry!! We are to live out our walk with Jesus daily That you are not just a student living that day to day school life but you are also a missionary on a mission, ministering in the school.That’s your greatest opportunity of letting your light shine. So next time you walk down the street, remember what you are here for and who you belong to!

Make a list on areas in your life that you can let you light shine and make it happen!! Think about what you’re involved in or even some ideas of opportunities to let your light shine. Such as... 
  • Blessing someone with that $5 you have
  • Encouraging a classmate or friend
  • Going up and talking to that person who is alone.
In our everyday lives, we can take the opportunity to go out our way to just bless someone, talk to someone. We are called to reach our generation! Our light should shine none stop! Letting it shine, in you community, your school, your home and even when you’re just going to the shops or playing sports Saturday morning.

In your life just by choosing to live it for Jesus and offering yourself up as a living sacrifice. Living an ordinary life to do the extraordinary! Choosing to, in everything follow Jesus! That’s your calling!! You have been called for such a time as this to make a difference, to reach your generation and to let your light shine. 

So will you do it? Will you make that choice to let your light shine and not to hide it?

My scrumptious Paleo Banana Bread


My weekends as usual consists with me creating new foods in the kitchen. My aim today was to come up with a delicious banana bread that the whole family would love. And let me say... this would have to be one of the best banana breads I've ever made... And this recipe would definitely have to be one of my family's new favourite! So I thought I'd share this paleo recipe with you!!

Family Favourite Paleo Banana Bread

 Ingredients:

  • 3 eggs
  • Pinch of salt
  • 2 medium ripe bananas, peeled and broken into pieces. Plus one extra for decoration.
  • 1  tbsp raw honey (Or you don’t have to add as I find it sweet enough from the dates)
  • 1 tsp vanilla extract
  • ¼ cup desiccated coconut
  • 1 cup plus two tablespoons almond meal
  • 3 tbsp tapioca or arrowroot flour
  • 1 tbsp coconut flour
  • 1 tsp cinnamon powder
  • 1 tsp gf baking powder
  • ½ tsp bicarb soda
  • 2 1/2 tbsp coconut oil melted
  • ¼ cup walnuts, chopped
  • 5 dates, chopped up


Instructions:

Preheat oven to 165°C and line a loaf tin with non-stick baking paper.
Place eggs with a pinch of salt in a mixing bowl and whisk well. Add the 2 mashed bananas, honey, vanilla and whisk together until well incorporated. Add the almond meal, baking powder, tapioca, coconut flour, cinnamon and desiccated coconut, and mix together well. Lastly add the melted coconut oil and mix well. Fold in walnuts and dates. Pour the batter into the prepared loaf tin. Smooth the surface and place the extra banana (cut in half length ways) on top of the mixture.
Bake for 45 minutes until the skewer comes out dry. Serve and enjoy!!!
